Quick & Easy Pho: Vietnamese Instant Pot Oxtail Beef Noodle Soup (Phở Đuôi Bò)
Want quick pho? Try this simple Instant Pot pho recipe. This recipe uses an Instant Pot pressure cooker to create a rich and flavorful beef pho with oxtail. Pressure cook for only 30 minutes. Enjoy a delicious and authentic bowl of Vietnamese beef noodle soup in about one hour, from start to finish.
You Will Need:
4½ lbs oxtail
3 oz ginger (about 4 inches)
2 yellow onions (peel outer layer)
1 packet phở spices
2½ tablespoons sea salt
3 tablespoons fish sauce
25 grams rock sugar
2 teaspoons MSG (optional)
11 oz cooked beef balls (1 package)
2 lbs rice noodles
Green onions
Yellow onion
Red chili peppers/jalapenos
Lemons/limes

    The recipe is amazing but I made some slight changes with my second batch. I substituted pandan extract for vanilla extract. Also I cooked it in a water bath. This gave the end product an even more classic mochi texture.

    The spice packet doesn't seem to have any licorice, I think that is actually cardemon... Is cardemon licorice? No googling done here.

      It's the smaller yellow-bark-looking thing from the packet. I normally don't add actual licorice to pho when I do the spices individually. I usually just use star anise for the licorice smell.

      I believe this was a stripe bass. But you can use any fish.

    Hello! This is a follow up with additional Qs. After the one-month in the sun, do I bring the jar inside or just leave it out in the sun? And once the first batch is used up, do I re-use the brine and just add more lemons or do I start over following your recipe? Your response to one of the comments that you have some lemons that are 3+ years, are those from the original batch? Thank you!

      You can bring it in and leave it somewhere mostly sunny like a window sill or continue to leave it outside. I prefer direct sunlight outside. You can reuse the brine if there's enough to cover the new lemons. Yes, they were from the original batch 🙂 The longer, the better 😉

      For this recipe, no. But I did clean the bones beforehand by rubbing with salt and rinsing.

      A hint of a burnt smell is ok. That hint of burnt smell and bitterness actually work beautifully with Vietnamese braised dishes.

    Great recipe, but I didn't catch what makes it distinctly Vietnamese.

      The use of jicama usually (although I showed garlic chives here instead) and oyster sauce and chicken bouillon powder (one of our main seasoning ingredients). But call it whatever you like. Chinese wontons, Asian wontons ... or simply wontons work too...they are all very similar.
